I had a bunch of huge fresh lemons so the GF made a concentrated lemonade mixture yesterday. I had a fresh sample of DP Shakin’ The Tree, leftover Italian dressing from Pat & Oscars, the lemonade and a bunch of chicken thighs. Lemonade chicken was, therefore, my goal.
Marinated 7 chicken thighs in 1-cup each of the lemonade mixture and Italian dressing for 2 hours (could have used 4+ hours IMHO) drained them and applied rub, including under the skin. (Should have patted the meat after draining and before rubbing as it flashed up quite a bit.) Let it sit for about 30 minutes, sprayed with canola oil and direct grilled at medium temperature to about 180 internal.
While this recipe will continue to be developed, it really really rocked as it was.

thanks for the sample packs in my last order. I liked the Shakin the Tree very much. I used on two small pork tenderloins. My parents were in town and they are not into "hot and spice". I made two with Shakin and two with your hotter rubs. I added your Shakin the Tree rub then tossed in zip loc with a few small apple slices and a squeeeeez of fresh orange. Let sit for 45 min. They were great...Next time I will hit with another light coat of rub just before they hit the grill.

Had some great efforts with dizzy pig's new rubs this weekend. ..
on saturday night i did a couple of tuna steaks with shaking the tree rub. .. .had some nice 1/2 pound (probably 1 inch thick) tuna steaks. .. rubbed them generously with shaking the tree and left them to sit for about 45 minutes ... .had the egg set up direct at around 425 degrees. . . put the tuna on for only about 2 minutes per side. ..after the first 'flip' squirted a little fresh lemon juice on them and laid a pad of butter on top of each steak to melt in while the finished. .. nice and crusty on the outside, medium rare on the inside. . . .the citrusiness (is that a word?) of the rub really works great with tuna ...
