A good friend, Marc who goes by "zippylip" on cooking forums, is one of the most creative cooks I know. He is a big Dizzy Pig fan, and definitely cooks from the right side of the brain. Marc comes up with the most amazing recipes using Dizzy PIg, and was generous enough to provide several recipes for our Customer Recipe section. Thanks Zippy!

If you are a fan of Dizzy Pig Maple Salmon, this is a great way to serve it. Begin with a pound of pasta shells and two salmon fillets. Rub the salmon with oil and a generous application of Dizzy Pig Raging River bbq rub.

Grill the salmon over direct heat until the exterior is nice and caramelized

Melt a stick of butter in a pan, cook over medium heat until it turns a nice dark brown, then add about a half of a cup of maple syrup and turn the heat off. Add parsley, another good few shakes of rub and a splash of light cream into the finished pasta. Once it is nicely coated, add the flaked salmon, lightly toss, and serve.

The quantity of sauce may seem to be too little, about a cup in total, however, this is a very rich and flavorful sauce and you are really only looking to coat the pasta with it.
