Twice Baked Potatoes
4 baking potatoes
Dizzy Pigs Raging River Rub
4 tbsp butter
½ cup sour cream
½ cup grated cheddar cheese
½ cup chopped fresh chives
Preheat the oven to 400 degrees.
The first step is to prepare the potatoes for baking. Coat with oil.

Shake on Raging River rub, and press so it will stick..

Don’t forget to poke a few holes with a fork so they don’t explode in the oven.

Bake them on a pan or directly on a rack in the preheated oven for about an hour until they are easily pierced all the way through with a fork. Remove them and turn the oven down to 350 degrees.

Cut the baked potatoes in half, let them cool for a few minutes, and scoop all the flesh into a bowl.

Here are the skin boats ready for the mixture.

Mix the rest of the ingredients into the potatoes in the order listed above.

Stuff back into the potato skins, put the skins on a baking pan, and return to the 350 degree oven for about 25 minutes until browned and caramelized.

Top with a little sour cream if you want to. These are best to eat pretty soon after they come out of the oven while all the flavors are freshly blended.
